Weeknight Butter Chicken

Sometimes you just need an easy Tuesday night dinner that tastes like your favorite Indian takeout spot! This is a quick and easy dress up for the jar of butter chicken sauce from Target. Sooo easy, tasty and satisfying.

Ingredients

  • 1 large chicken breast (~1 lb), cut into bite size chunks
  • 2 tbsp olive oil
  • 2 tsp curry powder
  • 3 cloves garlic, minced
  • 1 jalapeño, cut in half lengthwise
  • Half a white onion, thinly sliced
  • 1 jar butter chicken sauce from Target
  • 1 cup white rice

How to

  1. Mix the olive oil, curry powder and minced garlic together, then add to a large Ziploc bag with the chopped chicken breast. Massage to make sure the meat is fully coated, then refrigerate for at least a few hours or ideally overnight.
  2. Brown the chicken in a couple tablespoons of olive oil in a nonstick pan over high heat.
  3. Add the onion to the pan with the chicken and saute until translucent and stringy.
  4. Add the jalapeño to the pan, followed by the butter chicken sauce. Lower the heat to simmer for about 30 minutes, stirring occasionally while you cook the rice according to package instructions.
  5. Serve over rice, with cilantro garnish and garlic naan, yum!!! Makes enough to feed three.
