Easy Lemon Vinaigrette
This is my favorite go-to salad dressing which I pretty much always have in the fridge. The lemon and olive oil go really well with just about any salad toppings – from a Greek salad vibe, to grilled veggies, to Soyaki tofu, it all works!
Ingredients
- 1/4 cup olive oil
- 1/4 cup lemon juice
- 1 tablespoon dijon mustard
- 2 cloves garlic, crushed or finely minced
- Freshly ground salt & pepper
How To
Add all ingredients together in a salad dressing shaker, or just a mason jar will do! Give it a shake until it’s well combined, and enjoy! Here’s the salad I’m loving the dressing on right now: mixed greens, cucumber, carrot, avocado, feta cheese and kalamata olives. YUM!
