Easy Mexican Rice
A shared recipe from a wonderful coworker!

Instructions
Place enough oil to cover bottom of non-stick pot and place over medium heat.
Pour in the rice and stir until lightly browned.
Pour in the tomato sauce and stir for about a minute.
Add 3 cups of water and bring to a boil. If doing 2 cups rice, use 5 cups water. Add 1 teaspoon chicken powder for every cup of water.
Reduce heat to low/medium, cover and cook for about 20 minutes, until water has been absorbed and rice is nice and fluffy.
