Khoa Soi Thai Curry Noodle Copycat Soup

One of the things I miss most with COVID is going out to eat good food with friends! But, one of the silver linings has been attempting to recreate our favorite restaurant dishes at home, and this one has gotta be the winner. For all y’all SB folks, this is the curry noodle soup from the Empty Bowl. Soooo good. Original recipe can be found here but I’m super excited to share my modified version with you and can’t wait to hear what you think!
Ingredients
- 1 large shallot
- 8 cloves garlic
- 1 bunch fresh cilantro
- 1 thai chili
- 1 inch piece fresh ginger, skin on
- Zest of 1 lime
- 2 tsp ground turmeric
- 2 tsp ground coriander
- 1 tsp curry powder
- 2 tbsp + 3 tbsp soy sauce
- 1/2 small can red curry paste (freeze the rest for next time!)
- 1 carton (4 cups) chicken broth
- 1 can (14 oz) coconut milk
- 2 tsp brown sugar
- 1 lb Khoa Soi egg noodles
- 1 block extra firm tofu
- 2 bunches bok choi
How to
- Cut the tofu into small cubes or triangles, toss with a little vegetable oil and bake at 400 degrees for 30 minutes, tossing halfway through.
- While the tofu is cooking, put a large pot of water on to boil and whip out your food processor. Toss in all the ingredients from shallot to the first 2 tbsp soy sauce and pulse until it forms a nice thick, heavenly smelling paste.
- Stir fry the tasty-paste in a couple tablespoons of vegetable oil in a large sauce pan on medium high heat, for 3-5 minutes – until fragrant but not overly browned.
- Add the second portion of soy sauce and the rest of the ingredients through the brown sugar, stirring as you go. Bring everything to a boil, then reduce to a simmer.
- Once your water is boiling, drop the bok choy in and cook until softened and stems are lightly translucent. Remove from the water, trim off the bottom stems and cut in half. Set aside for topping.
- Cook the noodles in the boiling water according to the package instructions. Serve cooked noodles into 4-5 bowls, then top with tofu, bok choy and broth. Add whatever spicy oil or chili paste your heart desires and enjoy!!! Yum!
