Pico De Gallo

Funny how most of the recipes we come up with that I love the most are a result of laziness… for a long time we would just buy the pre-packaged salsa from Santa Cruz Market, a local family owned grocer with amazing mexican food, marinated meats, etc. If you live in SB, you’ve gotta try their guac and hot salsa, soooo good! But, that market is like 15 minutes from our house while other grocery stores are only 5 minutes away… so we decided to try making our own pico with produce from the closer store and it turned out surprisingly delicious! All that said, I’m happy to share that the produce is way better at Santa Cruz so we’ll still usually go there to buy the ingredients when we are not being total slugs.

Ingredients

  • 6 tomatoes – roma or vine both work well
  • 1 medium red onion
  • 1 jalapeno
  • 1 bunch cilantro
  • 1 lime

How To

  • Cut the tomatoes in half, and scoop out the seeds/liquid-y parts. Save the seeds for your garden or feed your worms! You’ll only want the meat of the tomato for this recipe.
  • Finely chop up all of the veggies and add them to your bowl as you go.
  • Squeeze the lime over all of it and add salt to taste. Enjoy with chips or incorporate into some of our other favorite recipes, like huevos rancheros or taco salad!
