Veggie Burger Goodness
My first attempt at homemade veggie burgers turned out super tasty so I wanted to share with y’all! The only thing I may try to adjust in future iterations is somehow making them hold their shape a bit better, but overall super delicious and a great affordable, healthy alternative to the store bought ones.
Ingredients
- 1 cup cooked quinoa
- 2 cans (15 oz) black beans
- 1/2 large yellow onion, finely chopped
- 1 cup mushrooms, finely chopped
- 2 large carrots, grated
- 1 cup oat flour (toss some classic dry rolled oats in the food processor for a minute or two)
- Garlic powder
- Paprika
- Oregano
- Salt
- Pepper
How to
- Sauté all veggies in olive oil until softened, seasoning with spices to taste as you go
- Rinse and mash beans in a large bowl while veggies cook
- Mix cooked quinoa and veggies into bean mash, stirring to fully combine
- Add oat flour and continue stirring – mixture should become more gummy and less liquidy
- Use a half or third cup measuring cup to scoop patties out and onto a parchment paper lined baking sheet, freeze and then repackage until time to eat
- To eat, microwave for 2-3 minutes to thaw and then sauté on medium-high in a bit of olive oil until nicely browned on both sides.
- Enjoy with classic burger toppings or try something new! My other favorite is to go bunless and top with sautéed spinach, a fried egg and some extra sharp cheddar. YUM!
