Veggie Burger Goodness

My first attempt at homemade veggie burgers turned out super tasty so I wanted to share with y’all! The only thing I may try to adjust in future iterations is somehow making them hold their shape a bit better, but overall super delicious and a great affordable, healthy alternative to the store bought ones.

Ingredients

  • 1 cup cooked quinoa
  • 2 cans (15 oz) black beans
  • 1/2 large yellow onion, finely chopped
  • 1 cup mushrooms, finely chopped
  • 2 large carrots, grated
  • 1 cup oat flour (toss some classic dry rolled oats in the food processor for a minute or two)
  • Garlic powder
  • Paprika
  • Oregano
  • Salt
  • Pepper

How to

  1. Sauté all veggies in olive oil until softened, seasoning with spices to taste as you go
  2. Rinse and mash beans in a large bowl while veggies cook
  3. Mix cooked quinoa and veggies into bean mash, stirring to fully combine
  4. Add oat flour and continue stirring – mixture should become more gummy and less liquidy
  5. Use a half or third cup measuring cup to scoop patties out and onto a parchment paper lined baking sheet, freeze and then repackage until time to eat
  6. To eat, microwave for 2-3 minutes to thaw and then sauté on medium-high in a bit of olive oil until nicely browned on both sides.
  7. Enjoy with classic burger toppings or try something new! My other favorite is to go bunless and top with sautéed spinach, a fried egg and some extra sharp cheddar. YUM!
